Daily pricing has to be quick. What was paid at the market this morning decides the counter price today, and a system that needs an evening to update is a system nobody uses.
Traceability starts at the delivery. Catch area, gear, vessel and date have to be recorded when the box arrives, because reconstructing it later is impossible and an inspection will not accept an estimate.
Pre-orders decide the buying. Knowing on Thursday what has been reserved for the weekend is what turns a guess at the market into a purchase — with fish, guessing wrong is the entire margin.
Waste has to be measured, not felt. What went unsold, by species and by day, is the only honest input to next week's order, and it is the number almost nobody writes down.
