Visits are constrained by guides, not by space. A tasting needs somebody to run it in the right language, so the timetable follows who is working rather than how many chairs exist in the cellar.
Scarcity has to be shared deliberately. When a bottling runs to six hundred bottles and the club has four hundred members, allocation is a decision with consequences, and doing it by whoever ordered fastest annoys the loyal ones.
Dispatch is a set of local rules. Which countries can be shipped to, what paperwork each needs and when it is too hot to send wine at all is knowledge that has to sit with the order rather than in somebody's head.
Every visitor is a future member. Names collected at a tasting, with what they liked, are the most qualified list a winery will ever have, and most estates let it walk out of the door.
