Split the site by music, not by night of the week. Somebody searching for a genre wants to know whether this is their room; a page that lists every style equally reads as a room with no identity, and that is worse than being niche.
Treat the big dates as products with a lead time. New Year's Eve is searched from October, and the venue that has a page up in October is the one people find in December — building it on 20 December is building it for next year.
The occasion pages are where the money is. A birthday table for ten is a different transaction from a single entry ticket: it has a date, a budget and a person who will be blamed if the night is bad, and that person reads carefully.
Answer the practical questions nobody else answers: how late the bar serves, whether entry is still possible after two, what the dress code excludes. These are searched at midnight by people who are already out and deciding.
